What can you do?

I am new to all of this but, it seems that other bike brands have some sort of suped up options, but I can't seem to find that for Honda VTX 1300. So my question is what all can be done to maximally increase performance?

Put on a Turbo!!!!!  O0 O0 J/K. Get it rejetted, put on a new air intake, new exhaust, etc etc.

The usual:
Open filter airbox/2 into 1 exhaust system/rejet

The less usual:
Port/polish and flow the heads
Turbo
Nitrous

Yeah, if I wanted to go faster, I'd have other options... like the Concours 1400.  :)

That might be true, but it doesn't have a chrome rear fender to make it look faster  ;D ;D
