Any paticular tour you sign up for or just made your own personal tour?  It's time I took the wife to one of these things.  Maybe I can convince her we need to take the bike.

the Texas Wine Trail ( https://www.texaswinetrail.com/ ) has certain events during the year that will save you a little money, or you are more than welcome to go to any winery you want, when you want...provided they are open  :P

Wayne and I have gone almost every year and LOVE it.  You will not be disappointed.  I would recommend that you do the cage tho....after several wineries you will not be in the best condition for bike riding.
